Surprise Cupcakes

1 package Chocolate cake mix. Mix as directed on package. Fill cupcake cups 2/3 full.

Filling: cream 1/3 cup sugar, 4 oz cream cheese, 1 egg and a dash of salt.
Fold in 1 (6oz) package semi-sweet choc chips. Drop by spoonfulls into cupcakes
Bake as directed on package.

Frosting: beat together 3 ounces cream cheese, 1/2 tsp vanilla, 4 tsp butter, 2/3 box powder sugar.
Frost cooled cupcakes and watch as everyone enjoys their suprise!

SPAGHETTI SAUCE

Cooking tips:

*Montreal Steak Seasoning is a FABULOUS seasoning for EVERYTHING!! We use it in gravy's, on salads, cheese sauce, salsa, chicken, steak, fish, etc. Put it on ANYTHING that you would put salt and pepper on.

*When preparing strawberries use a straw to take the center and stem out. Push a regular drinking straw up through the bottom of the strawberry right up through the top. It works perfectly. Do this over the sink to prevent quite the mess.

*When something is too salty (soup etc.) put a raw peeled potato in it. It will suck the salt right up!

*Fresh lemon juice will remove onion scent from hands.

*To avoid tears when cutting onions, briefly place them in the freezer before cutting.

*Perk up soggy lettuce by soaking it in a mixture of lemon juice and cold water.

* To keep hot oil from spattering, sprinkle a little salt or flour in the pan before frying.

*When baking in a glass pan reduce oven temp by 25 degrees.

*The freshness of eggs ban be tested by placing them in a large bowl of cold water; if they float, don't use them.

Crock Pot Tips

1. Spray the inside of your crock pot with non stick cooking spray before adding the ingredients. This makes clean-up a lot easier.

2. Usually it is not necessary to stir while cooking.

3. Onions, carrots and potatoes take longer to cook than meat. Place them on the bottom and around the sides of the cooker so they get the most direct heat.

4. Tough and inexpensive cuts of meat work great in a crock pot. they become really tender as they cook.

5. There is no need to add any more liquid than the recipes calls for as liquid is retained when slow cooking. Turkey and roast beef are especially moist and tender when cooked in a crock pot.

6. If you are using frozen meat, add 2 hrs to your cooking time when cooking on high, or 4-6 hours when cooking on low.

7. Your crock pot should be at least half full for proper cooking.

8. Lifting the lid while cooking generally lengthens the cooking time by 30 min.

9. Cooked food can be held 1-2 hrs on the low setting without overcooking if you need to delay your meal.
